Robert L. Wolke to Discuss the Science of Good Cooking at The Book and The Cook Event at Chemical Heritage Foundation
Wolke, author and Washington Post food columnist, will talk about good food and good chemistry on Friday, 24 March 2006.

PHILADELPHIA, PA — 22 February 2006 The Chemical Heritage Foundation (CHF) will host its first The Book and The Cook event on Friday, 24 March. The featured speaker will be Robert L. Wolke, chemist, author, and food columnist for the Washington Post.

Wolke is professor emeritus of chemistry at the University of Pittsburgh and author of What Einstein Told His Cook: Kitchen Science Explained and What Einstein Told His Cook 2: Further Adventures in Kitchen Science. His talk, “Chemical Abuse in the Kitchen,” on the science of food and cooking, is aimed at both scientists and nonscientists and will describe his research into debunking a variety of long-held food myths. The lecture, beginning at 6:00 p.m. , will be followed by dinner at 7:30 p.m., with recipes specially selected to complement Wolke’s writing and observations on the chemistry of food. Signed books will be available for purchase.

Wolke's Washington Post column, "Food 101," won the James Beard Foundation Journalism Award for best newspaper column and the International Association of Culinary Professionals' Bert Greene Award for best newspaper writing. He was also awarded the American Chemical Society's 2005 Grady-Stack Award for Interpreting Chemistry for the Public.

Price is $50 per person including wine. CHF is located on 315 Chestnut Street , in the heart of Independence National Historic Park in the Old City neighborhood of Philadelphia .
